Grilled Chicken Kabobs

Summertime and grilling go hand-in-hand. Next time you want to strike up the grill, give this healthy chicken kabob recipe a try. The marinade combines heart-healthy olive oil with a host of wholesome herbs, including ground cumin. Native to the Mediterranean and Asia, cumin seeds are rich in phytosterols—plant chemicals known to inhibit the absorption of cholesterol in the body. Research has found that consumption of cumin may aid weight loss, and support healthy cholesterol and triglyceride levels.[1]

Ingredients

1/4 cup olive oil

1/4 cup lemon juice

1/4 cup white vinegar

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon dried oregano

1/2 teaspoon dried thyme

1/4 teaspoon salt

1/4 teaspoon ground black pepper

2 pounds skinless, boneless chicken breast, cut into 1 1/2-inch pieces

6 wooden skewers

1 large green pepper, cut into 1-inch pieces

1 large red bell pepper, cut into 1-inch pieces

1 large onion, quartered and separated into pieces

12 cherry tomatoes

Directions

To create the marinade, whisk the first 9 ingredients (olive oil to black pepper) together in a large bowl. Add the chicken and toss until all pieces are evenly coated. Cover the bowl with plastic wrap and set in the refrigerator for at least 2 hours, or overnight for the best flavor.

30 minutes before you’re ready to start grilling, soak your wooden skewers in water. The skewers should soak for the full 30 minutes. Soaking helps prevent splinters and charring.

Preheat your outdoor grill on medium-high heat and lightly coat the grate with olive oil to prevent sticking.

Remove the chicken from the marinade and shake off the excess liquid. Discard remaining marinade.

Thread pieces of chicken, pepper, onion, and tomatoes and onto the skewers, leaving about 1½ to 2 inches free on the bottom for easier handling.

Cook the skewers on the grill, turning frequently with tongs until chicken is evenly browned on all sides, with no pink in the center, about 10 minutes. Remove skewers from grill and serve w
